4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon Italian seasoning
2 large ripe tomatoes, sliced
8 ounces fresh mozzarella, sliced
1 cup fresh basil leaves
1/2 cup balsamic vinegar
2 tablespoons honey
Freshly cracked black pepper for garnish (optional)
Instructions
Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.
In a small bowl, combine olive oil, salt, black pepper, garlic powder, and Italian seasoning to create a marinade.
Place the chicken breasts between two sheets of plastic wrap and gently pound with a meat mallet to even out the thickness.
Brush the chicken breasts liberally with the marinade on both sides and allow them to rest for about 10 minutes at room temperature.
Place the chicken breasts on the grill. Grill each side for about 6-7 minutes or until the internal temperature reaches 165°F (74°C). Remove from the grill and let them rest.
While the chicken is grilling, prepare the balsamic glaze by combining balsamic vinegar and honey in a small saucepan. Simmer over medium heat until it thickens, about 10 minutes.
Once the chicken has rested, arrange the tomato slices and mozzarella on top of each breast. Sprinkle with fresh basil leaves.
Drizzle the balsamic glaze over the prepared chicken. Add freshly cracked black pepper if desired.
