1/2 tsp salt
1 tsp ground cinnamon
1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
2 tsp vanilla extract
3/4 cup brown sugar
1 tbsp ground cinnamon
2 tbsp melted butter
1 cup powdered sugar
2 tbsp milk
1/2 tsp ground cinnamon
A pinch of nutmeg (optional, for a spiced kick)
Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition, followed by the vanilla extract. Mix until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
For the filling, combine the brown sugar, cinnamon, and melted butter in a small bowl, stirring until smooth.
Spoon a tablespoon of cookie dough onto the prepared baking sheets, flattening each slightly. Add a teaspoon of filling in the center, then top with another tablespoon of dough, sealing the edges gently.
Bake the cookies for 12-15 minutes, or until the edges are golden brown. Allow them to cool on the baking sheets for 5 minutes before transferring to a wire rack.
To make the glaze, mix the powdered sugar with milk and cinnamon in a small bowl. Drizzle over the cooled cookies.
