A delightful and healthy Italian-inspired appetizer featuring zucchini rolls filled with a rich and creamy filling.
Ingredients

2 large zucchinis, thinly sliced lengthwise
Olive oil for brushing
Salt and pepper to taste
Optional: a pinch of red pepper flakes for an extra kick
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1/2 cup fresh basil, chopped
1 garlic clove, minced
1 tablespoon lemon zest
Optional: 1/4 cup chopped sun-dried tomatoes for a richer flavor
1 cup homemade marinara sauce
1/4 cup fresh basil leaves for garnish
Optional: a sprinkle of freshly grated Parmesan for topping
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Prepare the Zucchini: Using a mandoline slicer, thinly slice the zucchinis lengthwise into strips about 1/8-inch thick. Brush both sides of each strip lightly with olive oil and season with salt and pepper.
Grill the Zucchini: Heat a grill pan over medium-high heat. Grill the zucchini strips for about 2-3 minutes per side, or until soft and grill marks appear. Set aside to cool.
Make the Filling: In a medium bowl, combine ricotta cheese, Parmesan, chopped basil, minced garlic, and lemon zest. Mix well until the ingredients are fully incorporated.
Assemble the Roll-Ups: Spoon about a tablespoon of the cheese filling onto one end of each grilled zucchini strip. Roll up the strip tightly, securing with a toothpick if necessary.
Bake the Roll-Ups: Place the zucchini roll-ups seam side down on the prepared baking sheet. Top each roll with a spoonful of marinara sauce and bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
Garnish and Serve: Remove from the oven and let cool slightly. Garnish with fresh basil leaves before serving.
