2 cups fresh strawberries, hulled and halved
1 cup blueberries
1 cup raspberries
2 kiwis, peeled and sliced
1 mango, peeled and diced
1 cup pineapple chunks
2 oranges, peeled and segmented
1 banana, sliced
Juice of 1 lime
1 tablespoon honey
1 teaspoon vanilla extract
1/2 cup yogurt for a fruit salad with yogurt (optional)
Mint leaves for garnish (optional)
Instructions
Wash all fruits thoroughly. Hull and halve the strawberries. Peel and slice the kiwis and mango. Segment the oranges carefully to avoid any seeds. Dice the pineapple into bite-sized chunks. Finally, slice the banana last to prevent it from browning too quickly.
In a large mixing bowl, gently combine all the prepared fruits. Use a large spoon to toss them softly, ensuring even distribution without crushing the delicate berries.
In a small bowl, whisk together the lime juice, honey, and vanilla extract. Make sure the honey is fully dissolved to achieve a smooth consistency.
Pour the dressing over the mixed fruit in the bowl. Toss gently to coat all the fruits evenly. Cover the bowl and refrigerate for at least 30 minutes.
Once chilled, transfer the fruit salad into a serving dish or individual bowls. Add a dollop of yogurt on top if desired. Garnish with fresh mint leaves.
